Sushi Rice:
- 250g sushi rice
- 1 tsp salt
- 2 tbsp white sugar
- 3 tbsp rice vinegar
- 2 tbsp mirin
Toppings:
- Sliced Avocado
- Shaved Carrots
- Cubed Cucumber
Mango & Jalapeno Salsa:
- 1 Mango
- 1 Jalapeno
- 0.5 Red Onion
- Juice of 0.5 Lime
Pickled Red Onions:
- 1 Red Onion
- Equal parts rice vinegar and water
- Dash of coriander
- 2 tbsp sugar
- 1 tbsp salt
Directions
Poke:

- Cube the Ahi Tuna.
- Prepare two separate bowls for Shoyu and Spicy sauces.
Shoyu Sauce:

- Mix soy sauce, sesame oil, sambal olek, and sliced scallion.
- Marinate cubed tuna in the sauce for 1 hour or serve immediately.
Spicy Sauce:

- Combine soy sauce, kewpie mayo, sriracha, sambal olek, sesame oil, and scallion.
- Marinate cubed tuna in the spicy sauce for 1 hour or serve immediately.
Sushi Rice:

- Cook sushi rice according to package instructions.
- Mix salt, sugar, rice vinegar, and mirin. Add the mixture to the rice gradually while fluffing.
